The first thing that strikes you about Toulouse is its color. The Ville Rose, as it is affectionately called, radiates a warm pinkish glow from its centuries-old brick buildings, bathing the city in a romantic hue that deepens as the sun sets over the Garonne.
Toulouse is having its moment in France. Culinary experts from across the country are diving into its rich agricultural scene, where cassoulet isn’t just a meal but a deeply rooted tradition, and the fierce local pride is so evident that the locals even have their own brand of pain au chocolate, called “chocolatine.”
Echoes of the 15th-century woad trade boom whisper through Renaissance mansions. At the same time, the unmistakable hum of the aerospace industry cements Toulouse’s place in the future. And for a visitor looking to immerse themselves in the heart of it all, there is no better place to stay than the Grand Hôtel de l’Opéra.
LOCATION, LOCATION, LOCATION
When I stepped inside the Grand Hôtel de l’Opéra, part of the BW Premier Collection by Best Western, I was immediately swept up in the rhythm of Place du Capitole. This isn’t just a square—it’s Toulouse’s grand stage. It’s where the city’s history and style play out in full view.
The imposing Capitole de Toulouse, with its regal façade of rosy-hued brick and intricate carvings, is flanked by elegant colonnades that house chic cafés and luxury boutiques. The stylish locals—effortlessly chic in their tailored coats and silk scarves—glide past on bicycles or linger over an espresso, catching up on the latest gossip as the warm scent of freshly baked baguettes drifts from the nearby boulangeries.
Wandering past these storied streets on a “Taste of Toulouse” culinary tour with American expat Jessica Hammer, I’m drawn in by the boutiques showcasing French haute couture. The window displays are a dazzling parade of tailored blazers, buttery leather handbags, and designer perfumes.
Around the corner, a violinist plays a hauntingly beautiful melody, adding an impromptu soundtrack to my stroll. Just a few minutes away, the Marché Victor Hugo buzzes with culinary energy. Cheesemongers proudly arrange their Roquefort wedges. Butchers expertly slice the famed Toulouse sausage and florists craft bouquets of the city’s signature violets. Here, the heart of the city beats strongest.
HOTEL HIGHLIGHTS
Originally a 17th-century convent, the 55-room Grand Hôtel de l’Opéra has lived many lives before transforming into this property. Once home to Carmelite nuns who moved through its arched corridors in quiet contemplation, today it dances to a different tune. Think opulence, indulgence, and Old World charm.
Stepping into the grand lobby is like slipping into a sumptuous opera scene. Floral drapes cascade from gilded ceilings, chandeliers sparkle like Toulouse’s starry skies, and antique furnishings lend an air of aristocratic elegance.
The grand staircase, a spiraling work of art, invites you to glide up its polished steps as if en route to a royal ball.
The ambiance is electric yet intimate. It’s a perfect blend of theatrical drama and refined sophistication.
Breakfast here is a ritual of indulgence. A lavish spread of freshly baked croissants, golden pain au chocolat, and pillowy brioche tempt from silver trays. Creamy Roquefort and delicate chèvre sit alongside jewel-like jars of house-made preserves.
And for a taste of Toulouse’s haute cuisine, the Michelin-starred Les Jardins de l’Opéra, conveniently located next door, redefines French gastronomy. Think melt-in-your-mouth duck foie gras with black truffle and a spicy stock of lagoustine–all complemented by regional wines that sing on the palate.

My Deluxe Queen room was oh-so Francais!
Each morning, a serenade of sparrows became my wake-up call. I heard their melodies drift through the open windows. I’d rise to a scene so quintessentially Toulouse. Red-tiled rooftops stretch toward the horizon, with the Garonne River shimmering in the distance like a ribbon of liquid silver.
The golden morning light bathed my suite. It was the perfect private den for deep contemplation of the day’s upcoming adventures.
Inside, the opera red-hued décor was regal yet inviting. Plush drapery, gilded mirrors, and a velvet-clad armchair practically begged for an afternoon of reading pleasure with a glass of rosé.
The queen-sized bed, draped in Egyptian cotton sheets, cradled me in comfort each night. Meanwhile, my courtyard-facing windows ensured the hum of the Capitole was a mere whisper.
With its deep soaking tub, the marble-clad bathroom felt like a private spa. L’Occitane en Provence toiletries added a touch of southern French indulgence. My room became a place to relive the day’s marvels before slipping into a restful slumber.
